Whether you’re a seafood, steak or veggie fan, the right marinade can elevate your Easter feast to new heights.
We’ve got you covered - try out one of our three marinades, each tailored to a different type of main ingredient to create a deliciously fresh feast to suit every palate. Plus, we’ll wrap up with some tips for making your outdoor entertaining a true crowd-pleaser.

1. Zesty Herb and Lemon Marinade (For Vegetarians or Seafood lovers)
This vibrant herb and lemon marinade is fresh, zesty, and light. It’s perfect for grilled vegetables, tofu or halloumi, adding a burst of citrusy goodness. This marinade also works beautifully with a variety of seafood.
Marinade ingredients:
- ¼ cup olive oil
- Zest and juice of 2 lemons
- 2 tbsp fresh oregano, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 2 garlic cloves, minced
- 1 tsp honey (optional for a touch of sweetness)
- Salt and pepper to taste
This recipe makes enough marinade for 500g to 700g of calamari – enough for 2 to 4 servings, or 4 to 5 cups of chopped vegetables.

Method:
- In a bowl, combine the olive oil, lemon zest, lemon juice, herbs, garlic, and honey.
- Whisk together until the ingredients are well blended.
3. Place your vegetables (we suggest zucchini, bell peppers, mushrooms or eggplant) or tofu/halloumi into a dish or resealable bag. If you’re opting for seafood, we suggest calamari, prawns or scallops for some extra flavour.
4. Pour the marinade over and let it sit for at least 30 minutes in the refrigerator.
5. Grill your marinated vegetables or seafood until tender and slightly charred and enjoy!
2. Smoky BBQ Marinade (For Red Meat)
For the meat lovers in the family, nothing beats the rich, smoky BBQ flavour of marinated beef or lamb. This marinade will bring a deep, earthy essence to your red meat, ideal for the grill.
Marinade ingredients:
- ¼ cup olive oil
- ¼ cup apple cider vinegar
- 3 tbsp smoked paprika
- 2 tbsp brown sugar
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 2 garlic cloves, minced
- 1 tsp ground cumin
- Salt and pepper to taste
This recipe makes enough for 700g to 1kg of steak – enough for 2 to 4 servings.
OR 4 to 6 smaller steaks or 2 large cuts (like ribeye or sirloin).

1. In a medium bowl, whisk together all the ingredients until the sugar is dissolved and the marinade is well combined.
2. Place your beef or lamb steaks (or any red meat of choice) in a resealable plastic bag or shallow dish and pour the marinade over the top.
3. Seal and refrigerate for at least 2-4 hours, or overnight for a deeper flavour.
4. When ready, grill your meat however you like and baste with the leftover marinade for extra flavour during cooking.

Sweet, rich, and umami-packed, the hoisin marinade is a fantastic choice for poultry or pork. The savoury elements balance beautifully with the sweetness, making this marinade an instant crowd-pleaser.
Marinade Ingredients:
- ¼ cup hoisin sauce
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp sesame oil
- 2 garlic cloves, minced
- 1 tsp ground ginger
- 1 tsp Chinese five-spice powder
- 1 tbsp chopped spring onions (optional)
Depending on your main ingredient of choice, this recipes makes enough for:
- 500g to 750g of chicken or pork – about 2 to 4 servings.
- 2 to 4 chicken breasts, thighs, or pork chops.
- 1 pork tenderloin or about 10 chicken drumsticks/wings.
