Bake up delicious Easter joy: Simple treats to share 

Easter is the perfect time to indulge in delicious, sweet treats, and there’s no better way to celebrate than by baking up some homemade goodies. Remarkable Rocky Road

Rocky road is a playful dessert that’s as easy to make as it is delicious. This is the perfect sweet treat to make with the kids and the beauty of it is - they can really make it their own. Packed with crunchy, chewy, chocolatey perfection, it’s the perfect treat for any Easter gathering!

Ingredients: 

  • 200g milk or dark chocolate 
  • 100g white chocolate (optional for extra sweetness – substitute for more milk chocolate if you prefer) 
  • 1 cup mini marshmallows 
  • 1 cup mixed nuts (almonds, cashews, or your choice) 
  • 1/2 cup dried fruit (raisins, cranberries, etc.) 
  • 1/2 cup of Mini Eggs or MnMs  
  • 2 tbsp butter 

 This recipe makes enough for 20 squares of rocky road.

 Method: 

1. Melt the milk/dark chocolate and white chocolate (if using) along with the butter in a microwave-safe bowl, stirring every 30 seconds to prevent burning. 

2. Once the chocolate is melted and smooth, stir in the marshmallows, nuts, dried fruit, and Easter candy (you don’t have to stick to the exact measurements either - measure with your heart!). Be gentle so that the marshmallows don’t melt! 

3. Pour the mixture into a lined baking pan (8x8 inch works great), spreading it out evenly. 

 

4. Place it in the fridge to set for at least 2 hours, or until firm enough to cut into squares.

5. Slice into bars or pieces and serve on a festive platter!
