Zesty herb and lemon marinade (for vegetarians or seafood lovers)

This vibrant herb and lemon marinade is fresh, zesty, and light. It’s perfect for grilled vegetables, tofu or halloumi, adding a burst of citrusy goodness. This marinade also works beautifully with a variety of seafood.

Ingredients

¼ cup olive oil

Zest and juice of 2 lemons 

2 tbsp fresh oregano, chopped 

2 tbsp fresh parsley, chopped 

1 tbsp fresh thyme, chopped 

2 garlic cloves, minced 

1 tsp honey (optional for a touch of sweetness) 

Salt and pepper to taste 

Method

  1. In a bowl, combine the olive oil, lemon zest, lemon juice, herbs, garlic, and honey. 

  2. Whisk together until the ingredients are well blended. 

  3. Place your vegetables (we suggest zucchini, bell peppers, mushrooms or eggplant) or tofu/halloumi into a dish or resealable bag. 

  4. Pour the marinade over and let it sit for at least 30 minutes in the refrigerator.
     
  5. Grill your marinated vegetables or tofu until tender and slightly charred and enjoy!  

This recipe makes enough marinade for 500g to 700g of calamari – enough for 2 to 4 servings, or 4 to 5 cups of chopped vegetables.
