Sweet and savoury hoisin marinade (for poultry or pork)

Sweet, rich, and umami-packed, the hoisin marinade is a fantastic choice for poultry or pork. The savoury elements balance beautifully with the sweetness, making this marinade an instant crowd-pleaser.

Ingredients

¼ cup hoisin sauce 

2 tbsp soy sauce

2 tbsp rice vinegar 

1 tbsp honey 

1 tbsp sesame oil 

1 tsp ground ginger 

1 tsp Chinese five-spice powder 

1 tbsp chopped spring onions (optional) 

2 garlic cloves, minced

Method

  1. In a bowl, combine all ingredients, whisking to blend into a smooth sauce. 

  2. Place your chicken or pork cuts into a dish or resealable bag and pour the marinade over the meat, ensuring it’s evenly coated. 

  3. Marinate in the fridge for at least 2 hours, or overnight for more intense flavour.
     
  4. Grill or roast your poultry, brushing with leftover marinade during cooking for extra glaze and flavour. 

Depending on your main ingredient of choice, this marinade makes enough for:

  • 500g to 750g of chicken or pork – about 2 to 4 servings.
  • 2 to 4 chicken breasts, thighs or pork chops.
  • 1 pork tenderloin or about 10 chicken drumsticks/wings.
