Steak Burger

There’s nothing quite like a tender steak on a soft sourdough bun to satisfy those burger cravings. Select a cut of steak such as an eye fillet or rib fillet for best results, however, a rump steak will also make for a wonderfully flavourful burger. Season steak with salt and pepper before grilling on a high heat until medium rare.

A sourdough bun is a great option for a steak burger, and the flavour will complement the beef well. Pickled red cabbage will really enhance the flavour of the steak, or if you’d prefer, you can also substitute this for sauerkraut. Red onion will provide a crunchy freshness and cheese will top the burger off nicely.

Ingredients

600g Rib fillet steak or skirt steak

4 Sourdough buns

200g red cabbage; shredded

2 red onions; 1 cut into rings, 1 sliced

Swiss cheese

3 tbsp red wine vinegar

2 tsp caster sugar

4 tbsp olive oil

Salt

Freshly ground black pepper

Method

  1. Mix the red cabbage with the sliced onion (reserve the onion rings), vinegar, sugar and olive oil.  
  2. Season with salt and pepper and leave to marinate for 30 minutes.

  3. Heat a griddle pan or barbecue until hot. Season the meat with salt and cook for 5 minutes on each side, depending on the thickness.  

  4. Remove the steak from the pan, leave to rest briefly and season with pepper.  
  5. Cut the rye rolls in half horizontally. Cut the meat into strips. Fill the rolls with the drained red cabbage salad, the steak strips and onion rings. Secure the tops with a wooden skewer if desired.
