Miguel's Mother's Day Breakfast

Every mum needs a day off; some time to delight in the simple pleasures of nothingness and to be overindulged by her little ones. So, why not make this Mother’s Day a time to do just that? Lucky for you, Miguel and his two sous-chefs, Claudia and Morgan, have put together the ultimate breakfast in bed recipe of scrambled eggs and grilled chorizo so you can treat mum. Whip up this simple recipe with the kids, that will tantalise mum's tastebuds while she reclines in bed. 

Ingredients

3 eggs

1 chorizo

2 rashers of bacon

3 tbsp butter

1 ripe avocado

sea salt (optional)

pepper (optional)

Method

1. Crack the eggs into a cold, non-stick pan, add the butter, and the stir the eggs fast to combine the yolks with the egg whites and butter.

2. Place the pan on the stove over a low-medium heat. Cook very slow to allow the eggs to set into a creamy consistency - about 3-5 minutes. When the eggs begin to set, take the pan off the heat. Note: the eggs should still be soft. Set aside the eggs.

3. Score the chorizo using a knife, and cook the chorizo and bacon on the BBQ or in a non-stick pan on the stove over a medium heat. 

4. Slice some bread, and toast it, then spread some butter. Slice half an avocado into strips, or as desired.

5. Serve the buttered toast with the scrambled eggs on top, the slice avocado, and a side of chorizo and bacon.

6. Serve mum her surprise breakfast in bed, with some juice or her choice of coffee or tea.

 

Tip: Don't let the eggs get too hot in the pan. Keep moving the pan off and back on the heat to ensure the eggs don't become hard.

Bonus tip: Tabasco or Siracha are a great addition to the meal if Mum likes spicy food.
