Hot cross bun pudding with custard

Elevate your hot cross buns this Easter with this delicious hot cross bun pudding recipe. Baked with homemade custard, this dish is perfect for a special occasion brunch and is sure to wow anyone who tries it. 

Ingredients

7 hot cross buns

80 g orange marmalade

80 g dark chocolate

200 g double cream

200 ml milk

1 tsp vanilla extract

80 g caster sugar

2 egg yolks

1 tsp cornflour

2 tbsp butter

2 tbsp clear honey

2 tbsp apple juice

Method

1. Preheat the oven to 180°C, gas 4. 

2. Cut the hot cross buns in half horizontally. Spread the bottom halves with the marmalade and place in a single layer in a baking tin. 

3. Chop the chocolate and sprinkle on top. Cover with the top halves of the buns.

4. Whisk the cream with the milk, vanilla, sugar, egg yolks and cornflour and pour over the buns. Leave to stand for about 20 minutes.

5. Bake the pudding for 30-35 minutes until golden brown. 

6. Melt the butter with the honey and apple juice in a small pan. Brush over the hot pudding and serve.
