Beef & Charcoal Burger

Try our tasty beef burger with charcoal bun recipe, or tweak it to customise the remainder of your burger ingredients to cater to your taste buds. Adding caramelised onions and mushrooms to your burger will provide a smokey BBQ flavour and a touch of sweetness. A fennel slaw and rocket will bring a freshness to the burger which will pair perfectly with the smokey flavours and tender patty.

Ingredients

FOR THE BLACK BUNS:

525g plain flour

35g caster sugar

15g active dried yeast

1 tsp salt

8 tbsp milk

80g softened butter

2 eggs

28g squid ink

Sesame seeds for sprinkling

FOR THE HAMBURGERS

1 tbsp butter

3 red onions; peeled and cut into rings

2-3 pinches brown sugar

2-3 tbsp balsamic vinegar

600g minced beef

Salt

Freshly ground black pepper

1 handful frisee lettuce

Method

1. For the black buns, place the flour, sugar, yeast and salt in a bowl. Add half the milk, the butter, 1 egg and the squid ink and knead into a smooth, pliable, non-sticky dough. Add a little more water or flour if necessary. Cover and leave to rise in a warm place for 1 hour.

2. Knead the dough again, then divide into 12 portions, shape into 9 cm flat circles and place on 2 baking trays lined with baking paper. Cover with a damp tea towel and leave to rise for another 1 hour.

3. Preheat the oven to 200°C, gas 6.

4. Whisk the remaining egg with the remaining milk and 2 tbsp water. Brush over the buns and sprinkle with sesame seeds. Bake for 12-14 minutes. Remove the buns from the tray and leave to cool.

5. For the burgers, melt the butter in a pan and fry the onions until golden brown. Sprinkle with the sugar, allow to caramelise then deglaze with the vinegar.

7. While the onions are cooking, divide the mince into 4 equal portions and shape into flat burgers. Heat a frying pan and fry the burgers for 2-5 minutes on each side until cooked to your liking. Season with salt and pepper after turning. 

8. Cut 4 burger buns in half horizontally and assemble with the lettuce, burgers and onions.
