Aunty Beryl's Damper

This NAIDOC Week, we visited Aunty Beryl, a Gamilaroi Elder, educator, mentor and business woman, at NCIE (National Centre of Indigenous Excellence) to learn her legendary damper recipe. Aunty Beryl is the founder of NCIE's job ready program and is passionate about healthy, affordable cooking. Follow the below easy steps to try Aunty Beryl's damper recipe at home.

 

Method

1. Preheat the oven to 180C (fan-forced). 

2. Sift flour into a bowl through a fine sieve.

3. Add a 1/4 cup of powdered milk and mix it with the flour.

4. Make a well in the middle of the mixed ingredients, and gradually pour in the water. Mix the ingredients together and add more water as needed until it forms a dough.

5. Knead the dough into a ball.

6. Dust a surface with flour, and shape the dough into a circle, 16cm across.  

7. Brush dough with a little milk mixed with water and glaze the top of the dough.

8. Place onto a tray dusted with flour. Cook in the oven for 30-45 minutes, until golden brown. 

9. Remove from the oven, and serve with your favourite honey and jam. Enjoy!

  • Extra self-raising flour for dusting
