1. Preheat the air fryer to 350°C, grease with cooking spray, and line with baking paper.
2. Whisk honey, coconut oil, and vanilla in a small bowl.
3. In a separate bowl combine almonds, walnuts, goji berries, sunflower seeds, shredded coconut, cinnamon, and nutmeg.
4. Pour the wet mixture over the dry mixture and toss to coat.
5. Spread the combined mixture evenly over the prepared air fryer tray.
6. Bake for 25 minutes or until golden. Let cool completely before use.
