1. Preheat the air fryer to 400°C, grease with cooking spray, and line with baking paper.
2. Combine all filling ingredients in a medium bowl and let sit.
3. In a separate bowl combine flour, chilli powder, garlic powder, salt, and pepper.
4. Add almond milk to the spice mixture and stir.
5. Place breadcrumbs into a small bowl.
6. Dip bite-sized cauliflower into the milk and spice mixture, then toss in the breadcrumbs.
7. Place coated cauliflower into the air fryer basket and cook for 7 minutes.
8. Flip all florets and cook for another 7 minutes.
9. Assemble the tacos and serve.
