Air fried cauliflower tacos

Vegetarians rejoice! These cauliflower tacos are out of this world. A great alternative to fish and an absolute must-try on your next taco Tuesday. 

Method

1. Preheat the air fryer to 400°C, grease with cooking spray, and line with baking paper. 

2. Combine all filling ingredients in a medium bowl and let sit.  

3. In a separate bowl combine flour, chilli powder, garlic powder, salt, and pepper.

4. Add almond milk to the spice mixture and stir. 

5. Place breadcrumbs into a small bowl.

6. Dip bite-sized cauliflower into the milk and spice mixture, then toss in the breadcrumbs. 

7. Place coated cauliflower into the air fryer basket and cook for 7 minutes. 

8. Flip all florets and cook for another 7 minutes.

9. Assemble the tacos and serve.

Ingredients

  • CAULIFLOWER:
  • 1 cauliflower (cut into bite-sized pieces)
  • 1 ½ plain flour
  • 1 tsp of chilli powder
  • ½ tsp of garlic powder
  • Pinch of salt and pepper
  • 1 ½ cups of almond milk (or milk of choice)
  • 1 ½ cups of breadcrumbs
  • FILLING:
  • 1 cup of sliced cabbage
  • ½ red onion (finely diced)
  • Garlic clove (minced)
  • ¼ cup of lime juice
  • TO GARNISH:
  • Avocado (sliced)
  • Lime wedge
  • Coriander
  • Sriracha
