While not traditional, fish burgers have grown immensely in popularity over the last few years. The delicate flavour of fish is enhanced by the other burger ingredients, without being overpowering. This burger is also suitable for pescatarians. Start with a fillet of Atlantic salmon cooked medium, or for a cheaper option, good quality canned salmon. Mix with capers, chopped fresh parsley and panko crumbs and form into a patty shape. Coat further in panko crumbs and fry until golden brown.
To create the burger, use your favourite lettuce and more fresh herbs—both coriander and parsley work well. Top with a wasabi sauce to add a complexity to the flavour. Mix wasabi sauce with mayonnaise, adding more wasabi for a hotter result, and less wasabi if you prefer a milder flavour. Additionally, you can add lemon juice to the sauce for a slightly sour tang.
For alternatives to salmon, battered flathead or grilled barramundi burger will work just as well with these ingredients.
