Looking for a new family favourite recipe? Try these delectably soft lobster rolls, from the Stockland Summer of Food magazine.
Method
1. Make the dressing. Put the mayonnaise in a small bowl and stir in the lemon juice, zest, tomato purée, paprika and celery. Fold in the lobster meat.
2. Cut the rolls in half and toast the cut sides under a hot grill.
3. Top the base of the rolls with lettuce, then spoon on the lobster mix.
4. Garnish with spring onions and chervil before putting the top of the rolls in position to complete.
